Vegetarian cake collection

There has been numerous request to make vegetarian cake..There goes my hunt on vegetarian cakes recipe..There has been several sites which gives you a better insight on vegan baking, but ultimately baking an eggless cake sounds more like a nightmare to me...With the science of baking- reaction between the flour, egg, butter & sugar..

I gathered all my guts and went on trying some eggless recipe. There are many recipes that uses different ingredient to stabilize the cake. I came across this website http://chefinyou.com/egg-substitutes-cooking/. There is a table on all the possible substitution for an eggless recipe.

With all the google-ing & youtube-ing, i ventured into my eggless baking for my granny 76 birthday. This recipe uses condensed milk as the replacer for egg. There are many cake recipe out there which calls for condensed milk in their recipe.

So i tried with one recipe which calls for basic condensed milk, flour,& butter. The cake was a basic cake, so i layered and filled them with buttercream icing to create more height & taste. I frosted them with white buttercream icing & and wrote her birthday wishes in Tamil.



The cake was a hit. I have attached some pictures of the cake.. Everyone loved the cake..

From there on, i have started trying out different types of eggless cakes. Chocolate cakes with chocolate ganache, orange cake, and sugee cake..

Comparing the taste of eggless to cake with eggs, there are definetely some differences to expect. But for vegans, this are great treats as there are not many vegetarian cakes that is available out there. I have once tried some eggless cake that taste nothing less than a sponge- no flavour to it.

Eggless baking is a unique experience, i still wonder how the chemistry works without an egg..
I have just attached the recipe that i started off with (**adopted from some website that i cant remember :)

Basic Eggless Cake Recipe



Ingredients:

250 gm plain flour
2 tsp baking powder
1 tsp baking soda
1 tin/400gm sweetened condensed milk
100 gm butter melted
175 ml water
2 tsp vanilla extract

Method:

 In a mixing bowl, assemble the flour, baking powder and baking soda, mix with a spoon and sieve once to make the mixture uniform. Preheat the oven at about 100 to 120 degrees centigrade. Put in the condensed milk, melted butter, vanilla essence and water into the mixing bowl containing the dry ingredients. Beat with an electric hand mixer, whisk or spoon until the mixture comes together and there are no lumps. This shouldn’t take more than a minute with an electric hand mixer/beater. Be careful not to over beat the mixture as this could result into a hard cake. Pour the batter into the cake tin and bake for an hour at 150 degree centigrade. The cake is done when a knife or cake tester comes out clean when inserted in the centre of the cake.
